Clean-er Pancakes



Not the prettiest, but were yummy anyway.
Egg, 2
Honey, 2 tbsp 
Baking Powder, 4 tsp
Milk, 2 cups
Olive oil, 1tbsp
Coconut oil, 1/2 cup
Unbleached, All-purpose flour, 2 cups

Mix together flour, honey and baking powder. Add oil, 1 1/2 cups milk, and eggs. Mix until well moistened. Put olive oil in skillet and heat. Add pancake mix at about 1/2 cup at a time. Cook until bubbly then flip pancake. Cook a few more seconds and remove. Repeat till done. I made 8 approximately 6 inch pancakes then added the rest of the milk to batter to make 6/ 8-10 inch crepes to use in German pancake soup. Serve with topping of choice
