Peppery Beets and Carrots



I adapted this recipe from this one on Gracious Pantry if you haven't checked this site out yet please do.  She has awesome advice and recipes.
Peppery Beets and Carrots
1 can of beets, drained
3 large carrots peeled and sliced
1/2 onion sliced
olive oil
salt
pepper
garlic powder
On a large pizza pan/cookie sheet drizzle some olive oil.  Put onions, carrots and beets on sheet and toss to coat in oil.  Sprinkle salt, pepper and garlic powder (to taste, I didn't measure them out when I was doing this). Place in 350 degree oven and bake for about 30 minutes until carrots are tender an everything is slightly wilted looking.  This will serve about 4.  I miscalculated so the six of us had very small portions.
